Chili-Marinated Bacon Burger
Creating the perfect bacon burger is no small task, and I suspect it will take me several years to do so - if ever I do. That said, the testing isn't exactly torture, so I don't mind. For this first proper stab at it, I decided to go for a properly meaty burger - which I reckon is important - in the form of a Westin Gourmet 6oz burger, which is a dense little thing packed with delicious beef; it also has a near-perfect texture, being both juicy and tender. I decided to tone down the use of sauces (limiting myself to a drizzle of American mustard and about 1tbsp of ketchup - normally I'd use a bbq sauce) and relying instead on the bacon to provide the more part of the flavour. Since I still wanted a bit of kick in my burger, I opted for Chili, Garlic & Ginger marinated smoked bacon
The result? Awesome. The bacon provided just the right amount of oomph and the burger's consistency was, as mentioned above, spot on. While normally a bbq-sauce kind of guy I didn't actually miss it at all, if anything it would have probably dominated the taste of the bacon too much. Rating: 85% - a better bun and a slice or two of tomato would probably bring that up to about 90%.
Here's the recipe for anyone who fancies a taste:

You'll need:

  • 1x6oz good quality Beef burger
  • 2-3 rashers of Chili, Garlic & Ginger marinated bacon
  • 1 handful of Lettuce
  • 1 Burger Bun (I used Waitrose own Wholemeal buns, which are actually pretty good)
  • Ketchup and American(!) mustard to taste
  • a Barbecue

Method:

1) Prepare the bacon at least a couple of hours before cooking, ideally leave it overnight. The recipe is available through the link in the ingredients list.

2) Get your bbq started, add burger when ready. Meanwhile, chuck your bacon in a hot, dry (the marinade provides all the fat you need) pan and fry to your liking.

3) Put everything but the bun inside the bun, eat, enjoy.

Hi again Leigh, glad to see you found your way to my humble blog. :) That's exactly what I thought a couple of months ago, so I decided to go ahead and do it. As it turns our it's rather tasty, and I will definitely be trying out different marinades in the near future. Considering a couple of alcohol (whisky, beer) based ones in particular.
