Bacon Granola Bars
This is quite possibly the healthiest recipe you'll find in the Bacon Bible, at least in the cakes and cookies section. Granola bars have become quite popular lately, and it's easy to see why. Considering their relative healthiness as compared to cookies, they're an awesome snack when you're feeling peckish. Now, the normal variety comes with oats, seeds, nuts and fruit.. While they're very tasty, they definitely benefit from having the fruit replaced with bacon. Oh, nearly forgot, people commonly toast the seeds, nuts and oats in the oven (15min at 160c) before adding them to the sugar and butter mixture. I tend not to, partly because I'm lazy and partly because I don't think it makes them tastier.

 

You'll need:

  • Granola Melting Pot100g of Butter, and a bit extra for greasing
  • 200g of Porridge oats
  • 100g of Sunflower seeds
  • 50g of Sesame seeds
  • 50g of Chopped nuts (I'd recommend walnuts or hazelnuts)
  • 3-4tbsp Maple syrup
  • 100g Light muscovado sugar
  • 1tbsp Ground cinnamon
  • 150g "Light" caramelised bacon (click the link for recipe), cut into bits (maybe 1x1cm) - weight refers to amount of bacon, does not include sugar etc.

 

Method:

  1. Once you've caramelised your bacon, lower the oven to 160c, and butter an 18x25cm baking tray.
  2. Bacon Granola Bars - Dry IngredientsMeasure out your sugar, maple syrup and butter into a saucepan and place over low heat until the butter has melted. Stir occasionally, whilst placing the remaining ingredients in a bowl and mixing together.
  3. Once the butter's melted, simply add in all of your remaining ingredients and stir until the oats are all covered. Take your time doing this as you don't want to end up with dry oat-pockets.Bacon Granola Bars - Pre-oven
  4. Tip into the pre-greased baking tray and press down lightly. Place in the middle of the oven for half an hour, then set aside to cool for about 15 minutes. Cut into 12 bars, and tuck in!
